LAMMN began with a single obsession: the art of lamination — the meticulous process of folding butter into dough, layer by delicate layer. What started as a delivery-only croissant kitchen in western Bangkok, with no storefront and no signage, quickly built a loyal following through one simple promise: every croissant arrives fresh, crisp outside, airy inside, and rich with butter.

In 2021, we formalized our craft by establishing Brown Baking Co., Ltd. — a purpose-built bakery facility in Samut Sakhon — and expanded from individual delivery to full-scale wholesale, serving cafes, hotels, and restaurants across greater Bangkok.
